One evening in 2021 we were daydreaming about a delicious stacked enchilada that we could eat and feel 100% good about- and that’s how we came up with Big Bertha’s Fat Stack. We stack corn tortillas with seasonal squashes, roasted corn, and plant based cheeses with tomato and finish with a dollop of plant based sour cream. Protein in the beans and in our cheese.
