I love to have a green bowl on my rotation and this bowl delivers the entire farmers market in one bite. We will rotate the greens as needed due to the heat but mainly spinach that is paired with cooked quinoa to provide a complete protein. The dish has roasted or grilled asparagus and zucchini and fresh cherry tomatoes and cucumbers and scallions. We are dusting the top with a nut crunch and avocado bite. The dressing is made from avocado, parsley and cilantro, garlic and jalapeno and olive oil. The dressing is served on the side to allow you to decide when is enough.
