Y’all this dish is off the hook DELICIOUS. There is nothing more comforting than a warm piece of “meat” loaf paired with a parsnip and cauliflower puree. This dish offers seasonality and satiety by incorporating mushrooms, chickpeas, lentils and veggies, all while maintaining our standard of whole item use with celery leaves serving as a garnish on top. Hands down, THIS is what I’m personally most excited to eat! The loaf is finished with a soy, balsamic, and tomato glaze that will dazzle your taste buds.
Chef’s pro-tip: If you’d like caramelization (who doesn’t LOVE caramelization!?), pan sear on both sides by heating up a pan. Warm both sides up for a crunchier texture.
