SHES’S FRESH: Seared Tip Gyros with Dairy Free Tzatziki

Transitioning to a plant based diet can be hard at first for the person just deciding to make the decision to add more plants to their diet.I think it is important to meet people wherever they are on the continuum and offer meals to transition easier.  This dish is so fresh with the lemon and dill (hello summer) red onion and tomatoes that let you build how you want to eat it.  All paired with okra fries that have a cajun spice to them.  Okra will stay until all is gone in the farms and then we will create something else.  Give this dish to the hater who says plant based doesn’t taste good.  I LOVE IT.  Will come in components to build on the fly.     Heating instructions include just warming the steak bites and keeping everything else cold.  I would also recommend throwing the okra fries in the pita as well.
