Vito and Vera Fall Panzanella

Fall panzanella is my spirit dish. Lovingly roasted fall veg to include beets, squashes of all sorts, brussels and chickpeas paired with gently massaged kale to soften the leaves and a great pomegranate molasses dressing. Making an appearance are pomegranate arils. Pomegranates are packed with calcium, iron and magnesium and they are a great burst of freshness and this is their time so enjoy.
