Stuffed Mini Peppers with Black Beans

The tiniest peppers arrived from the farm which allowed me to fire roast them and then stuff them with our taco meat, fire roasted corn, cilantro and brown rice. This dish is topped with plant based cheddar cheese and garnished with avocado and salsa. This item will not be available for long as I am using the tiny green peppers and not the normal size. Get this while you can and you may freeze multiples which will only help the flavor. Dairy-free, gluten-free and off the hook delicious. Fire roasted poblano takes this dish to the next level.
