I was wanting a bit of pasta but all the heaviness with usual pasta dishes and dairy ingredients really make me feel bad and this heat is leaving me feeling super yucky. This Tuscan Orzo dish really delivers on the light italian flavors with plant based chorizo, spinach and olives mixed in and topped with a plant based mozzarella and fresh basil from our home garden. This dish comes with a side salad for a bit of greens and an OG italian red wine and vinegar dressing to seal the deal. I love this because it really does give you the pasta bite with none of the food hangover when eating dairy. This dish is a must order and I would recommend freezing the orzo piece and keeping it for food emergencies. So yummy, clean and on point for summer. Totally what I am eating today.
